This is a great little salad recipe, perhaps to use at a BBQ!

Ingredients
1 large ripe avocado (or 2 small ones)
2 large tablespoons of mayonnaise
2 large tablespoons of fresh lemon juice
1 teaspoon of seeded mustard
1 Tablespoon of extra virg olive oil
1 large tomato
1/2 cucumber
Cabbage

I use finely sliced cabbage as the base for this salad but you can also use plain lettuce like iceberg but nothing overpowering like rocket.

Open avocado and deseed. Scoop the contents out and cube in 1cm chunks. Mix the mayonaise, oil, mustard and lemon juice in a bowl and season lightly. Tip in the avocado and let it stand.

I usually just buy packaged shredded cabbage for convenience but cut up the cabbage thinly. Cut the tomato and cucumber in to 1cm chunks and mix with the cabbage. Squeeze a little extra lemon juice over the cabbage and salad then mix on a flat plate.

Tip the avocado mix on top of the salad covering it.

Cook your BBQ, crack a beer/wine and relax.
