I need to get my hands on Cinghale (wild boar) to make a ragout to have with an array of Birthyear wines (plus a couple of younger wines) this Saturday.

Checked Vics & AC Butchery no help.. any other suggestions?

Also trying to source some Fregola in Sydney & am having trouble.. anyone know where i can get some?

Did you find your Cinghale? My ex boyfriend used to go hunting for wild boar. He would check the liver for worms, and then if it's okay, he'd bring it home. It has a nice, earthy flavour.
If you're looking again, why don't you contact the shooter's association and see if they have any contacts for hunters that sell their catch? Might be a long shot but perhaps somewhere to start?

Try Pinos Meats down in Kogarah. He supplies most of the top end Italian restaurants in Sydney with artisan meats. If he doesn't have any, he should know where to get it.

you can buy it from the simson. it used to sell it. but i personally feels that many places other than it can sell you cheaper but you have to compromise with the years i think... but it is good for younger wine i suppose... if u get to know then send me info too....

hey i personaly dont know the area where you live in but many super markets in that area can bring you what u want... u just have to go and order that in there...
i hope your problem will be solved soon...

The pig-hunters' utes are usually obvious, a couple of dogs in cages, deceptively docile-looking but big and undeniably strong. Such a ute was parked over the other side of my street for a while but the house has since been rented to others and now sold. I could probably get you in touch with someone who hunts feral pigs if I checked some family/acquaintances. Feral pigs are environmental hazards.
